Favorite Roasted Chickpea Meal

The flavors! The textures! The mix of temperatures! I’m not kidding when I say it’s my favorite... I definitely make a version of this more frequently than any other meal. Sometimes it’s as tacos or with cauliflower instead of broccoli, but the flavors and contrasts remain the same.  My ultimate comfort meal.  It's the food version of a self-hug.

Everyday Sautéed Apples

This simple recipe has been my breakfast all winter.  It is warm, hearty & keeps me full until lunch with lots of protein, fiber, and healthy fats.  Plus, it's so quick you can have breakfast by the time you're done brewing your tea or coffee.
