Maple Nut Granola
I received homemade granola as a gift a few years ago and I couldn’t go back. This one is pretty similar to that gift with lots of fancy nuts & seeds and good clumps from the maple syrup. Coconut flakes, olive oil and a healthy sprinkling of sea salt elevate it further. I love the mix of pecans, cashews, pepitas & sunflower seeds, but I’ve been known to toss others in there as well like almonds & hemp seeds. I just use what I have, especially the lonely handfuls leftover from other recipes.
Granola takes about an hour and very little effort. Plus it makes enough to share and is a great gift when packaged in a cute jar! What are you waiting for?
Suggested Granola Pairings:
- yogurt + fruit (especially juicier fruit like blood oranges or peaches)
- sautéed apple (recipe to come soon!)
- milk + fruit (is it berry season yet?!)
- milk + FROZEN raspberries (if you love how root beer freezes to ice cream in a float, you'll <3 this! Plus you get pink raspberry milk at the end!)
- nothing, just eat it by the fistful

Maple Nut Granola
prep: 10 min | total time: 55 min | clean up: minimal | makes: ~ 7 cups (enough to share!)
3 c old fashioned oats
3 c or so of your favorite nuts and seeds (a little more or less is fine!) here I used about 1 c cashews, 1 c pecans, 1/2 c pepitas, & 1/2 c sunflower seeds
1 c coconut flakes (the big ones)
3/4 c maple syrup (the real stuff)
1/2 c extra virgin olive oil (regular olive oil would be fine)
1 t coarse sea salt (pink Himalayan sea salt is fun!)
Preheat oven to 300 degrees F & line a baking sheet with parchment paper
Combine oats, nuts & seeds, and coconut flakes in a large bowl. Measure olive oil & maple syrup in a liquid measuring cup and whisk to combine, or measure into a small bowl and whisk to combine. Pour liquid over oat/nut mixture and stir with a mixing spoon to coat evenly. Sprinkle salt and stir again. Spread granola onto parchment prepared baking sheet and bake. Stir every 10 minutes or so until toasted, around 45 minutes.
While waiting to stir the granola, clean up your mess, make some tea, fold some laundry, or do some other quick activity you've been meaning to do. ;)
For optimal clumps, press down granola with the back of a spoon or spatula before the last 10-15 minutes. Always wait until it is cool to package (this keeps it crisp). Keeps well in an airtight container for a couple weeks, if it lasts that long. Don't forget to share some with your favorite people so they can eat like a queen, too!
